Ingredients

  • Chicken (4 boneless, skinless chicken breasts or thighs)
  • Peanut butter (1/2 cup, smooth or crunchy depending on your preference)
  • Coconut milk (1 can, about 13.5 oz)
  • Soy sauce (2-3 tbsp)
  • Honey or brown sugar (1-2 tbsp, for sweetness)
  • Garlic (2-3 cloves, minced)
  • Ginger (1-inch piece, minced or grated)
  • Lime juice (1-2 tbsp, fresh)
  • Sesame oil (1 tbsp, optional)
  • Curry powder or ground turmeric (1 tsp, optional for extra flavor)
  • Red pepper flakes or chili paste (optional, for a spicy kick)
  • Chicken broth (1/2 cup, optional, to adjust consistency)
  • Salt and pepper (to taste)
  • Fresh cilantro (for garnish, optional)
  • Chopped peanuts (for garnish, optional)

Instructions

  • Cook the Chicken: In a skillet, heat oil over medium heat and cook the chicken until golden brown and cooked through, about 6-8 minutes per side. Set aside.
  • Prepare the Peanut Sauce: In the same pan, sauté garlic and ginger for 1 minute, then add peanut butter, coconut milk, soy sauce, honey, and lime juice. Stir until smooth and simmer for 2-3 minutes.
  • Combine and Serve: Return the chicken to the pan, tossing it in the sauce. Let it simmer for 3-4 minutes, then serve with rice or noodles and garnish with fresh cilantro and peanuts.

Notes

  • Adjust the Heat: To make the dish spicier, add chili flakes, sriracha, or fresh chopped chili peppers to the sauce. Adjust to your desired spice level.
  • Make It Vegetarian: Substitute the chicken with tofu for a vegetarian version. Press the tofu to remove excess moisture, then sauté it until crispy for the best texture.
